Heirloom Tomato Galette
When fresh tomatoes are at their peak, make this Heirloom Tomato Galette. A homemade pie crust is wrapped around herby crème fraîche and juicy tomatoes, then baked with a sprinkle of cheese.
PREP TIME: 20 MIN
– 9" pie crust
-Salt + pepper
COOK TIME: 30 MIN

Make the pie crust, let it rest overnight and roll it out to fit into a 9" pie plate.
Slice tomatoes and sprinkle with salt. Let them drain for 20 minutes.
Roll out the dough. Mix together herbs and creme fraiche and spread on the pastry.
Arrange the tomatoes on top.Bring the edges of the dough over the top of the filling, pleating together as desired. Sprinkle with cheese.
Bake on lowest rack in a preheated 400ºF oven, until pastry is golden, about 30-35 minutes
Let cool for 5 minutes, sprinkle with additional fresh herbs and serve immediately.
