Pie Crust of Choice
Olive Oil
Butternut Squash
Caramelized Onions
Eggs
Half and Half
Lemon Juice
Salt
Black Pepper
Feta Cheese
Fresh Thyme Leaves
Green Onions
Prepare pie dough (I recommend whole wheat dough!)
Roll the dough into a circle and place it in a 9" pie pan. Crimp or decorate the edges.
Add pie weights and blind bake!
Step 2
Prepare filling by caramelizing onions and roasting squash. This can be done ahead of time. When finished, combine filling ingredients together.
Step 3
Pour filling into the par-baked pastry and bake for 35-40 minutes or until the eggs are set throughout the pie.
Cover the pie crust edges with aluminum foil if they are browning too quickly.
