Ricotta Stuffed Rigatoni Pie

Rigatoni Pie is a baked pasta dish that is not only stunning to look at, but also so delicious. Rigatoni pasta is placed vertically in a springform pan, stuffed with an herby ricotta filling, topped with meat sauce, mozzarella cheese and baked to absolute perfection.

Ingredients

For Meat Sauce:

Ground Beef Ground Sausage Spices Tomato Paste Tomato Sauce

For The Filling:

Ricotta Cheese Egg Parmesan Cheese Spices

For Assembling:

Rigatoni Mozzarella Fresh Parmesan Basil

Step 1

Prepare springform pan. Make the quick meat sauce.

Step 2

Prepare the ricotta mixture and transfer ricotta filling to a plastic piping bag.

Step 3

Cook the pasta until al dente.  One by one, stand up the rigatoni pasta in concentric circles in the prepared springform pan.

Step 4

Fill each rigatoni tube with just enough ricotta filling to reach the top.

Step 5

Smooth meat sauce over the top with a spatula so that the sauce fills in the gaps. Top with mozzaralla cheese.

Step 6

Bake in the center of the oven for 35 minutes.

Step 7

To unmold, run a knife around the edges of the pie.  Unsnap the springform pan and carefully remove the sides of the pan.

Step 8 

Slice and serve with warmed additional meat sauce, and garnish the pie with additional parmesan cheese and fresh herbs.
