Easy Pumpkin Pie Bars
These Pumpkin Pie Bars features a creamy, rich, pumpkin pie filling, and a fun pumpkin seed shortbread crust; all the flavors of a classic Thanksgiving dessert.
– pumpkin puree
– pumpkin seeds
– all-purpose flour
– unsalted butter
– large eggs
– sour cream + milk

Prepare the pumpkin seed shortbread in a food processor.
Scrape the dough from the bowl and place it in the prepared baking dish. Press down the dough to an even thickness. And parbake it.
Whisk together the pumpkin filling.
Gently pour the pumpkin filling on to the shortbread and bake!
Let the bars chill, then cut into 9 servings.
Serve with Maple Whipped Cream and a sprinkle of cinnamon.
