S'Mores Icebox Cake
An easy no-bake treat, this cake is made up of layers of graham crackers, tangy marshmallow cream, and a silky chocolate ganache.
PREP TIME: 25 MIN
– graham crackers
– marshmallow fluff
– milk or dark chocolate
– heavy cream
– cream cheese
– granulated sugar
CHILL TIME: OVERNIGHT

Make a chocolate ganache by heating cream and pouring it over the chocolate.
Prepare the no-bake marshmallow cheesecake filling by whipping up heavy cream and sweetened cream cheese, and then fold them together with marshmallow fluff.
Start to layer the cake: Line the entire bottom with graham crackers, cutting any crackers as needed to fit.
Spread half of the marshmallow cream filling evenly on top of the graham crackers.
Spread half of the cooled chocolate ganache evenly on top of the marshmallow.
Repeat the process with one more layer of marshmallow cream, and chocolate ganache.
Then cover only half of the chocolate with the last layer of the graham crackers.
Cover the dish and let rest in the refrigerator for 8-12 hours. When ready to serve, slice in half and stack. Though this is optional.
Place the cake on a platter and carefully spread marshmallow cream on the top layer. Decorate as desired with s'mores toppings!
