Mile-High Icebox Cherry Pie
With layers of almond cream, vanilla wafers and cherry pie filling, this is the perfect make-ahead treat to serve to a crowd
Here's What You Need
– vanilla wafers
– heavy cream
– sour cherries + cherry juice
– cream cheese
– almond + vanilla extract
– lemon juice
Prepare the cherry pie filling by simply cooking up cherries, sugar and a thickener on the stove.
Prepare the no-bake cheesecake filling by whipping up heavy cream and sweetened cream cheese, and then fold them together.
Start to layer the pie: begin with a thin layer of cheesecake and 2 layers of vanilla wafers.
Next add 1/3 of the no-bake cheesecake filling.
Then, add half of the cooled cherry pie filling.
Repeat the previous layers of vanilla wafers, cream cheese and cherry pie filling before transferring the pie to chill in the refrigerator. Decorate before serving.
Once ready to serve, slice and serve the pie chilled.
