Maple Buttermilk Pie

This Maple Buttermilk Custard Pie has a creamy filling that is the perfect combination of tangy and sweet. Baked in a hearty Spelt Pie Crust with decorative maple leaves for a festive look.

- Spelt Pie Crust - maple sugar – cornstarch  – salt – eggs – heavy cream – maple syrup – maple extract (optional) – vanilla extract – buttermilk

Add the dry ingredients to a food processor, followed by cream cheese & butter to create a dough.

PREPARE THE SPELT CRUST

Roll the dough. Blind bake for 20 minutes at 375ºF. Remove the weights and return to the oven for 5-10 minutes. Whisk egg white and water then brush over crust.

BAKE THE CRUST

Reserve about 1/5th of the spelt crust dough for maple leaf crust cut outs. Bake for 15 minutes while blind baking your pie crust.

DECORATIVE PIE CRUST TIP

Whisk together the maple custard ingredients. Cook for 5-7 minutes on stovetop before pouring into baked pie crust.

PREPARE THE FILLING

Bake the pie for 40-45 minutes. Remove from the oven, and place it on a rack to cool. When it’s completely cool refrigerate until you’re ready to serve.
