Ham and Cheese Quiche

This pie is made up of uncomplicated ingredients and will be a big hit to serve at your next weekend brunch or holiday breakfast.

PREP TIME: 15 mins

– ham – sharp cheddar cheese – eggs – scallions (aka green onions) – dijon mustard – half & half (or milk and cream) – salt and pepper – pie crust

COOK TIME: 70 minutes

Make the pie crust either by hand, or you can make it in a food processor.

MAKE PASTRY

Roll out the fully chilled pie crust to a rough 11" circle, then transfer to a pie plate. Crimp the edges as desired.

ROLL OUT PASTRY

Fully blind bake the the pie shell. The bottom crust should be matte in appearance when it's done.

BLIND BAKE

Whisk together the eggs, half and half and salt and pepper.

MAKE THE FILLING

Fold in the green onions, ham and cheddar cheese.

MAKE THE FILLING

Transfer the filling to the  blind baked pie shell.

ASSEMBLE

Bake the pie until filling has set and puffed up throughout and has some light brown spots..

Let cool slightly before serving. This ensures it is fully set up.
