Mix together the cookie crumbs, butter, and sugar in a bowl. Place into pie plate and bake.
MAKE PIE CRUST
Mix together the flourless chocolate cake ingredients, pour into crust and bake.
MAKE CAKE LAYER
Pour heated cream over chocolate and espresso powder to make mocha ganache. Reserve 1/4 cup to use for whipped cream, and pour the remaining over the cake layer.
MAKE MOCHA GANACHE
Whisk together the pudding ingredients then heat on the stove until thickened. Pour on top of ganache layer.
COOK CHOCOLATE PUDDING
Whip the cream, add the reserved mocha ganache. Spread on top of the pudding layer.
WHIP CREAM
Garnish the pie as desired, with chocolate pearls or chocolate shavings. Serve chilled.
