Birthday Cake Batter Pie

This Birthday Cake Pie starts with a crunchy vanilla cookie crust, filled with a creamy no-bake funfetti filling and swirled with edible vanilla cake batter.

PREP TIME: 25 mins

– vanilla sandwich cookies  – heavy cream – cream cheese – unsalted butter – almond flour – vanilla + almond extract – rainbow sprinkles

COOK TIME: 10 mins

Mix together the cookie crumbs, butter, and sugar in a bowl.

MAKE PIE CRUST

Form the pie crust and then either bake for 10 minutes, or freeze.

Blend together cake batter ingredients until smooth, and set aside.

MAKE CAKE BATTER

Whip cream and set aside. Then beat cream cheese and sugar until light and fully. Combine the two, and then blend in sprinkles.

MAKE FUNETTI FILLING

Add 1/3 of the funfetti filling to the pie plate and smooth over the top.

ASSEMBLE

Continue to layer on with half of the edible cake batter.

Repeat this layering one more time, finishing with a layer of funfetti filling.
