Guinness Beef Pot Pie

Rich Guinness braised beef is baked under a flaky pie crust to make for the ultimate dead-of-winter meal. This Beef Pot Pie can be made as four single servings or as one whole pie.

PREP TIME: 25 mins

– stout beer (AKA Guinness) – homemade pie crust or store-bought puff pastry – beef – mushrooms + carrots – garlic + onion – all-purpose flour – tomato paste – fresh thyme leaves – beef broth – turbinado sugar

COOK TIME: 2 hours + 30 mins

Make the pie crust, and let it chill for at least 2 hours. Or buy some puff pastry instead!

MAKE PASTRY

Brown off the meat, add in the veggies, and deglaze with guinness. Braise in the oven for about 2-1/2 hours. Let it cool.

BRAISE THE BEEF

This beef pot pie can be made as individual servings, or as one whole pie.

ASSEMBLE

Transfer the beef filling to ramekins. Roll out the dough, cut out circles, and place on top of the ramekins. Then brush with egg wash.

Bake until the pastry is golden and bubbling. Let it cool for a few minutes before serving.
