After more than two years of expecting the unexpected in our world, 2022 felt like a return to a new normal. For much of the year, it felt like all the strife, and collective trauma we endured during the pandemic were truly behind us. Everyone returned back to the joy that is outdoor and indoor gatherings, parties, vacations, and travel. And of course, the unmasked sharing of food again!
On a more personal level, I too strived to find a new normal for myself after all that I had been through in 2021 with my genetic cancer disorder and breast cancer diagnosis. I finished "active" treatment and began my hormonal therapy in an effort to prevent cancer from coming back. While dealing with the side effects of cancer treatment is never easy, it is true that the mental toll is the most difficult mountain to climb. I am still traversing it.
But as I have learned through this season of my life, it is only when we experience the deep lows in our world that we can genuinely partake in the soaring highs. Cancer has taught me that life is worth living fully, and we shouldn't wait to achieve our dreams tomorrow; instead, we should commit to attaining them today, or at least try.
With that in mind, my family traveled more this year (and made plans to continue to do that), and I entered graduate school at Boston University. As part of my graduate degree, I enrolled in the Culinary Arts program and graduated this past December. It was intensive, with a lot of time spent away from my family and a practical hiatus from this website. Despite the difficulties, I'm glad I did it, and look forward to continuing my education over the next few years.
Despite all the hardships, change, and challenges, this little website has kept on. This was my entire calendar year as a "full-time" entrepreneur, but given my ongoing recovery from cancer treatment and the time I spent in school and traveling, I must admit I was hardly a "full-time" worker. So, while my space on the internet didn't get all the attention it might have needed, I am excited to jump right back into things in the new year.
I look forward to all that I have planned for Everyday Pie coming in the future, both soon and in the next few years. I am humbled to have made this website my career, and I still pinch myself some days when I take a sneak peek into my website analytics and see all the readers visiting it. I am so grateful that you make this a place where we can connect about pie.
And, it's always fun to see which recipes are the most popular and loved. Scroll down to see the most popular newly published recipes from this past year, as well as a few of my own personal favorites.
The Apple Pie Recipe
Whenever a recipe is labeled as "the best" (especially on the internet), I always want to know…well, why? What makes said recipe the best? Because everyone's idea of best is often different. Well, this Apple Pie recipe, over a decade in the making, is my "best." It's layered with super juicy and tender apples, lightly spiced and enrobed in a caramel-like apple cider reduction, and baked in the flakiest pie crust. I wanted this recipe to celebrate what an apple pie is supposed to be. Whether or not it is the best…I'll leave that up to you to decide!
Custard Pie
Don't tell the other pies on my website, but Classic Custard Pie might just be my favorite. It's a simple pie, made with everyday ingredients nearly everyone likely has in their home at any given moment. But, the final pie is greater than the sum of its parts. This perfect custard pie has a buttery sweet pastry that is properly cooked (no soggy bottoms, please) and a smooth, rich, egg-based filling that has not been overbaked. Don't forget that grating of fresh nutmeg on top of the pie; one small step makes all the difference in the world in terms of flavor.
Lemon Meringue Pie
This Lemon Meringue Pie recipe is not your standard recipe. While the taste is classic, I have thrown out all the typical rules when it comes to making it to ensure the very best flavor and texture. That's because I have a secret to share: before I developed this recipe, I didn't like Lemon Meringue Pie. However, I knew if I solved some of my dislikes in standard LMP recipes I could change that. Alas, after having fallen in love with Lemon Meringue Pie after countless experiments, I believe I have found the perfect recipe.
Beer Braised Beef Pot Pie
A truly hearty dinner, this Guinness and Beef Pot Pie showcases stout-braised tender beef in a rich and savory gravy, baked underneath the most delicious, buttery pie crust. Each comforting bite will warm you from the inside out. I originally developed this recipe in February 2020. We all know what happened shortly thereafter, and I just wasn't able to get this recipe on my site due to the lack of ingredients available. So it was with great excitement that I was able to circle back to this recipe and get it up on the site in 2022.
Classic Blueberry Pie
This pie is truly all about the blueberries, with very little interference from other flavors. There is a hint of orange that goes well with and accentuates the blueberry and a pinch of cinnamon to give a touch of nuanced warmth. It's baked inside of a classic flaky pie crust that is crisp and buttery. This recipe is destined to win blue ribbons… or at least garner a pat on the back from everyone who gets a slice.
Personal Favorites from 2022
Just like a mother would not want to pick a favorite child, it's nearly impossible for me to pick my favorites of the year. They're all my favorites…because if they weren't, then I wouldn't publish them. Here are a few stand-out recipes from this year that I really loved!
- The recipes that took the most time this year were my Classic Puff Pastry and Rough Puff Pastry. I made a lot of puff over a period of a year to create these guides, and I'm proud of them! It also gave me a lot of pastry to create other recipes such as Apple Turnovers, Cherry Turnovers, and Cinnamon Twists. Next year my big project is to create both a danish pastry and a croissant recipe, and I've already been testing for a few months on those.
- I continue to re-photograph a few of the first recipes I put on the website to better capture their deliciousness, including this Cherry and Strawberry Slab Pie, How to Make Swiss Meringue, and this Shepherd's Pie but my favorite I reshared this year was the Spiced Blackberry Pie. I find it an unusual combination but one that pairs so well together!
- This year I started a brand new website, Everyday Family Eats! This "sister site" features mostly savory dinner recipes for picky eats and busy moms, as well as some breakfast and family baking classics (because I couldn't resist not putting baking recipes on it even though I tried). To celebrate the launch of this site I created this Birthday Cake Pie and it's such a fun recipe I'm glad I developed.
- After the success of the other icebox cake recipes on my site (Cherry, S'mores, and Pumpkin) I created a fourth, Blueberry Mascarpone Icebox Cake. I think icebox cakes are amazing. So delicious, yet so simple to make. I already have been brainstorming what icebox cakes to create this next year.
- And finally, a recipe that must receive some type of mention is my Apple Pie Filling recipe. This recipe wasn't new this year, but it is the most popular recipe on my site year after year, and one that causes the most drama. Just like last year, history repeated itself and a few readers mistakenly replaced the apple cider called for in this recipe with apple cider vinegar, despite clearly instructing otherwise. Adding in nearly a cup of vinegar to a dessert recipe is never a good idea. In an attempt to clear it up further, I created a post just for those who seemingly don't know that Apple Cider is Not the Same as Apple Cider Vinegar which was part in jest, and part hoping to avoid any mishaps from other readers in the future. Unfortunately for those readers, even that didn't work, as some still made this mistake. Hopefully, we all learned from their mistakes: read every recipe thoroughly!
My Sincerest Thanks
As we say goodbye to 2022, I wanted to give my biggest thanks to you. My community means the world to me. Each time you send me a message, comment, or photo of something you've created with the help of these recipes, it lights me up and reignites my passion for baking.
Despite everything that occurs in my day-to-day life, this website is always a continuous bright spot. And without you, there is no Everyday Pie.
I appreciate your support, and I cannot wait to create even more with you in the new year!
XO Kelli
